The harissa (هريسة) some cumin is a puree of red hot peppers dried in the sun then crushed in the presence of spices.

There are regional variety according to the type of hot peppers, the taste and the preparation there.

So, the Berber harissa is cooked with some dried hot pepper of Cayenne, the garlic, some oil, some salt and some spices.
